We distil everything ourselves, by hand, on-site in our Darlinghurst distillery using May, our Australian-made copper still (named after May Loftus - Bondi legend and trailblazer). We work in small batches, using premium, sustainable ingredients because quality isn’t a trend - it’s how we do things. No shortcuts, no gimmicks, just beautifully crafted spirits that taste as good as they feel.
Château Tanunda, Icon of the Barossa, was established in 1890 and is the site of some of the Barossa Valley’s first vines planted, as well as its first winery. The Cake House is a boutique home-based patisserie based in Goulburn, NSW. Inspired by European flavours and crafted with premium ingredients, each product is made from scratch in small batches. Mrs C's is an Australian artisan condiments brand that draws on authentic recipes, including my own mum's secret recipe chilli oil, chilli honey & chilli almonds. This love affair with the earth, its composition and how it can influence flavour, flows through to Gibson’s winemaking philosophy.
